WOW! All this writing and thinking about what to write is making me hungry. As promised, Grandma Fanatic is going to chime in on a delicious meal because there is nothing that goesbetter with a good game than good food. Today`s recipe is Chicken Chimichangas. Recipe Ingredients: Soft taco tortillas,1pack, 16 oz. jar picante sauce or salsa, cooked chicken chopped, 1 small onion diced, 2 to 2 1/2 tsp. cumin ground, 1 1/2 tsp.dried oregano, salt to taste, cheddar cheese shredded. Recipe Instructions:Combine 1 1/2 cups picante sauce or salsa, chicken, onion, cumin, oregano, and salt ingredients in an oven, and cook over medium- low heat, stirring often, 25 minutes or until most of liquid is evaporated. Spoon a mixture of meat below center of each tortilla; top with cheese. Fold in 2 sides of tortilla to enclose filling. Fold over top and bottom edges of tortillas, making rectangles. Secure with wooden picks.Place folded side down, on a greased baking sheet. Coat chimichangas with vegetable cooking spray. Bake at 425 degrees for 8 minutes, turn and bake 5 more minutes. Remove picks, top with remaining picante sauce or salsa and other desired toppings. Grandma recommends more shredded cheddar cheese, guacamole, sour cream, shredded lettuce and diced tomato.Use as much chicken and shredded cheese as you like because if you run out of tortillas, just go to the store and get more, at half-time, of course. |
